Chocolate Peanut Butter Bar Recipe

Ingredients
2/3 cups peanut butter, preferably Reduced Fat or Omega-3
14 ounce can of fat free sweetened condensed milk
1 teaspoon vanilla extract
1 cup semisweet chocolate chips

Preparation
1. Line an 8-inch square baking pan with foil.
2. Place peanut butter and 2/3 cup sweetened condensed milk in a medium bowl. Microwave on HIGH 2 1/2 minutes. Stir and microwave 30 seconds. Stir in only 1/2 teaspoon vanilla. Spread mixture in pan, pressing into an even layer with fingers.

3. Place remaining sweetened condensed milk and chocolate chips in a medium bowl. Microwave on HIGH 1 1/2 minutes. Add remaining vanilla; stir until smooth. Pour chocolate mixture over peanut butter mixture; spread with a small spatula. Chill at least 1 hour until firm. Cut into 20 rectangular pieces. Store in an airtight container in refrigerator.

Yield: 20 servings (serving size: 1 piece).
